I absolutely DESPISE bananas unless they're inside a pie or bread, but my daughter loves them, so i buy them. She never seems to eat them all though so them im left wondering "what do I do with these leftover extra ripened bananas?"
Well guess what?? I looove banana nut bread!! This recipe has been played with a couple times, this it the way I prefer to make it.
PREHEAT YOUR OVEN TO 350*
2 Cups flour
1 Cup sugar
1/3 Cup oil
2 eggs (beat them first)
1 teaspoon baking soda
1 teaspoon vanilla
1/2 teaspoon salt
3-4 extra ripe bananas smashed
Smash your bananas is a large bowl...no need for a mixer.
Combine flour and baking soda in a separate bowl and sift together.
Sifting blends the two ingredients.... .....And catches and lumps you may have!!
Now add your oil, sugar, vanilla, salt, and eggs to the bananas....
Now Slowly incorporate the flour mixture into the wet mixture...
Nuts are optional...
Now pour your finished batter into a 4X8 loaf pan...
Bake for at least an hour. The middle of the loaf should be clean when u stick a toothpick or butter knife in the center.
I baked this one for 1 hour and 15 minutes.
And this is my finished product.
