Strawberries on her birthday!!

You only turn 5 once and my bouncing "big kid" was the inspiration for this party favorite. 
Strawberry cake made with fresh strawberry puree and strawberry butter cream icing. 


Cake:
4 1/2 cups cake flour
3 cups of sugar
5 1/4 teaspoons baking powder
3/4 teaspoon salt
3 sticks of unsalted butter softened
1 1/2 cups of pureed strawberry (frozen is okay, fresh is better)
8 egg whites
2/3 cup of milk
4 or 5 drops of red food coloring (optional)

PREHEAT YOUR OVEN TO 350*


Mix the flour, sugar, baking powder and salt until blended. 
Puree 1 1/2- 2 Cups of strawberries.
Add the softened butter and strawberry puree to the dry blend.
Separate the egg whites from the yolks and whip with the milk and food coloring.
Add the egg mixture to the previous mixture. Mix until well blended.


For my daughter's party I used a silicone 3D cupcake.
 If you dont have a huge cupcake pan...


Classic sized cupcakes work very good too. 
Heavily spray your cake pan or line your cupcake pan. 
Bake in your preheated oven.
Cupcakes 20-25 minutes
3D cake
 base:45-50 minutes
top:30-35 minutes



Let the cake(s) cool COMPLETELY before frosting.


Frosting:
3 sticks of unsalted butter softened
3-4 cups powdered sugar
1/2 cup pureed strawberry
2 Tablespoons of milk
2 teaspoons of vanilla extract

Whip all the ingredients together. 
The amount of sugar you use depends on the texture and sweetness you prefer. 



To assemble:
Shave about 5 centimeters of cake off the top of each piece. This bonds the icing to the cake and makes is stick in place. 
Frost the top portion of the cupcake and fill in the gap between the two pieces. 
A piping bag is recommended for the initial application of the icing. 



This giant treat disappeared so fast!!!
Easy to make and fun to eat!
