Pound for pound, the best cake you'll ever taste!!

Someone asked me if I knew how a pound cake got its name..and guess what?! I do!! Thats such a wonderful question thank your for asking!!

Pound cake is made using a pound each of butter, sugar, flour and eggs.

That's where the name came from!!! Virtually any cake made using that ratio is considered a pound cake!!

Here's the recipe for a classic pound cake!!

1 pound of unsalted butter (4 sticks, softened)
1 pound of sugar (2 1/4 cups)
3 1/2 cups of flour (SIFTED)
9 large eggs
1 teaspoon of vanilla
1 Tablespoon of salt

PREHEAT YOUR OVEN
TO 325*

In a large bowl or mixer cream together butter and sugar until fluffy like icing, about 8 to 10 minutes.

Drop your eggs into the mixture one at a time, make sure to incorporate each egg before adding the next. Crack them in a separate bowl first to avoid getting egg shells in your cake batter. Now add the vanilla.
Add the flour and salt in 3 or 4 different batches until your batter is smooth.

Spay 2 4x8 or 5x9 loaf pans, or line your pans with softened butter and flour, pour the batter half way up the side of each pan and bake for at least an hour. You want them golden brown, and a knife should be clean when testing your cake in the center.

My cakes baked 1 hour and 15 minutes.

Perfect pound cake for any picnic!!

It even has its own holiday...March 4th is National Pound cake day!!!
